Chicken with Rice, Pineapple, and Vegetables
Ingredients
- Rice 1 cup
- Carrot 1 piece
- Skin-On Chicken Breasts 15 oz
- Orange Bell Peppers 1 piece
- Leek 1 piece
- Courgette 5 oz
- Canned Pineapple Chunks 5 oz
Step-by-Step Guide
Step 1
Boil the rice and place it in a greased baking dish.
Step 2
Grate the carrot, cut the bell pepper and zucchini into strips, chop the leek, and cut the pineapple into small pieces.
Step 3
Sauté the vegetables and pineapple in vegetable oil for 5 minutes and transfer them onto the rice.
Step 4
Cut the chicken breast into cubes, add salt, pepper, turmeric (1/4 teaspoon), and sauté in vegetable oil until golden brown.
Step 5
Transfer to the dish on top of the vegetables. Sprinkle with dried rosemary (1/4 teaspoon), cover with a lid, and bake in the oven for 25–30 minutes at 355°F.
