Chicken with Porcini Mushrooms in Creamy Madeira Sauce

Ingredients

  • Chicken fillet 0 lbs
  • Wheat Flour ¼ cup
  • Salt to taste
  • Ground Black Pepper to taste
  • Butter 4 tablespoons
  • Olive Oil 2 tablespoons
  • Madeira ½ cup
  • Cream 1 cup
  • Meyer Lemon Juice 1 tablespoon
  • Spanish onions ½ head
  • Garlic 1 clove
  • Dried Rosemary 1 teaspoon
  • Dried Chinese mushrooms 0 oz

Step-by-Step Guide

Step 1

Soak the dried porcini mushrooms in warm water until soft. Drain the water and finely chop the mushrooms.

Step 2

Slice the chicken breasts diagonally into 2–3 thin pieces.

Step 3

In a bowl, mix flour, salt, and pepper.

Step 4

Finely chop the red onion and sauté in 2 tablespoons of butter until golden. Add the minced garlic and rosemary. Sauté for another couple of minutes.

Step 5

Add the Madeira, lemon juice, season with salt and pepper. Turn up the heat and cook for 3–4 minutes.

Step 6

Add the cream and porcini mushrooms, bring back to a boil, reduce to medium heat and let the sauce reduce to ⅓, stirring constantly. Adjust seasoning with salt and pepper as needed, keep warm.

Step 7

Dredge the chicken pieces in the flour mixture and shake off the excess.

Step 8

Sauté the chicken until cooked in the remaining butter and olive oil.

Step 9

Transfer the chicken pieces to a baking dish, pour the sauce on top, and place in a preheated oven at 355°F for 10–12 minutes. Serve immediately.
