Chicken with Onions and Garlic

Ingredients

  • Butter 1 tablespoon
  • Poultry 65 oz
  • Coarse Salt to taste
  • Ground Black Pepper to taste
  • Onion 2 heads
  • Garlic 10 cloves
  • Thyme 6 sprigs

Step-by-Step Guide

Step 1

Preheat the oven to 480°F.

Step 2

Rinse the chicken well, dry it, and cut it into 8 pieces. Peel the onions and cut them into quarters lengthwise. Peel the garlic.

Step 3

Brush the chicken pieces with softened butter, season with salt and pepper.

Step 4

Place the chicken in a baking dish, arrange the onions and garlic alongside, and add the thyme sprigs. Bake in the oven for 20 minutes until the juices are rendered. Drizzle the chicken and vegetables with the juices and cook for another 15–20 minutes until cooked through and golden brown. Transfer the chicken, all the onions, and 7 cloves of garlic to a serving platter.

Step 5

Mash the remaining garlic in the dish with the chicken juices and strain through a sieve. Drizzle over the chicken and serve.
