Ingredients

  • Poultry 5 lbs
  • Chicken Liver 4 pieces
  • Smoked Ham on the Bone 5 oz
  • Butter 5 oz
  • Lingonberry 5 oz
  • Onion 4 heads
  • Bouquet Garni 1 bunch
  • Garlic 1 clove
  • Bouillon cube 1 piece
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Cut the chicken (or even better, a turkey) into 6 pieces. The day before, prepare the broth. Bring 1 liter of water to a boil, add the broth cube, and stir until the cube dissolves. Add half of the specified amount of lingonberries to the broth and let it sit overnight.

Step 2

On the day of serving, melt 50 g of butter in a large cocotte. Sear the pieces of chicken until golden brown, turning occasionally. Pour half of the broth into the cocotte, add a bouquet garni, and let it simmer on low heat for 45 minutes.

Step 3

In a bowl, mix the remaining lingonberries with the chicken liver, add garlic, salt, and pepper, and grind into a minced mixture.

Step 4

Chop the onion. Melt the remaining oil in a skillet and sauté the onion until translucent. Add the minced meat and cook on medium heat for 5 minutes.

Step 5

Finely chop the ham, add it to the minced meat, and cook for another 5 minutes.

Step 6

Serve at the table alongside pickled lingonberries. Mashed potatoes or pea puree make great side dishes – they are not only delicious but also visually appealing.
