Chicken with Kenyan Beans and Walnuts
Ingredients
- Chicken Thighs 10 oz
- Walnuts 3 tablespoons
- Kenyan Beans 10 oz
- Parsley 4 stalks
- Citrus Zest Mix to taste
- Sun-Dried Tomatoes 0 oz
- Pickled Eggplant with Peppers 0 oz
- Vegetable Oil 5 tablespoons
- Rice Vinegar for Sushi 2 tablespoons
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Add the beans to boiling salted water and cook for 3–4 minutes. Drain in a colander and let the water drain off.
Step 2
Cut the chicken into thin slices across the grain. Chop the parsley, and slice the sun-dried tomatoes and peppers into strips.
Step 3
In a very well-heated skillet, sauté the chicken in vegetable oil for 2–3 minutes. Add the beans along with the tomatoes and peppers and cook for another 3–4 minutes. Finally, add the parsley, walnuts, lemon zest, rice vinegar, salt, and pepper. Mix well, remove from heat, and serve.
