Ingredients
- Courgette 2 pieces
- Chicken Drumstick 6 pieces
- Onion 1 head
- Garlic 1 head
- Radish 6 pieces
- Olive Oil 0 fl oz
- Honey 1 tablespoon
- Bay leaf 2 pieces
- Salt to taste
- Ground Black Pepper to taste
- Green peppercorns 6 pieces
Step-by-Step Guide
Step 1
Add peppercorns, halved onion and garlic heads, bay leaf, and a pinch of salt to boiling water. After five to ten minutes, lower the chicken into the water, and when it comes to a boil again, remove from heat, leaving the bird in the broth for half an hour.
Step 2
Shred the zucchini into noodles using a mandoline or a vegetable peeler and knife.
Step 3
Remove the drumsticks from the broth, place them on a baking sheet, brush with a mixture of honey and some oil, and put them in an oven preheated to 355°F for ten minutes. The chicken is almost cooked in the cooling water, and the oven is needed only for flavor enhancement and aroma.
Step 4
Warm the green noodles in the leftover oil, adding a pinch of salt and pepper. Top the noodles with the chicken and sprinkle with thinly sliced radishes.
