Ingredients

  • Chicken Thighs 5 lbs
  • Physalis 4 pieces
  • Ground ancho chili pepper 3 pieces
  • Red Long Chili Peppers 2 pieces
  • Onion 1 head
  • Garlic 6 cloves
  • Toasted Cumin Seeds 1 tablespoon
  • Salt to taste
  • Cilantro to taste
  • Fish Oil 1 tablespoon
  • Tortillas 6 pieces

Step-by-Step Guide

Step 1

Combine the chicken, roughly chopped physalis, peppers, onion, garlic, cumin, and a pinch of salt in the pressure cooker. Bring to a boil and cook for 15 minutes.

Step 2

Using tongs, remove the chicken and set it aside on a plate.

Step 3

Add cilantro and fish sauce to the pressure cooker. Blend the contents of the pressure cooker and season with salt to taste. Return the chicken, removing the skin and bones beforehand.

Step 4

If necessary, shred the chicken. Plate it and garnish with cilantro. Serve with tortillas and lemon wedges.
