Chicken with Grapes and Tarragon in White Wine
Ingredients
- Tarragon 2 tablespoons
- Rice 1 cup
- Skin-On Chicken Breasts 2 pieces
- Olive Oil 4 tablespoons
- Onion 1 head
- Dry White Wine 5 fl oz
- Merlot Grapes 5 oz
- Chicken Broth 1 cup
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Boil the rice in salted water.
Step 2
Lightly pound the chicken breasts. Season with salt, pepper, and sprinkle with chopped tarragon.
Step 3
Sauté the chicken in olive oil. Remove the chicken, and in the remaining oil, sauté the chopped onion. Pour in the wine and cook for 1 minute. Then add the grapes, 2 tablespoons of tarragon, pour in the broth, and simmer for about 5 minutes.
Step 4
Serve the rice on plates, top with chicken, grapes, and drizzle with the wine sauce.
