Chicken with Cherry Sauce
Ingredients
- Poultry 1 piece
- Parsley 1 bunch
- Wheat Flour 2 tablespoons
- Clarified Butter 4 tablespoons
- Chicken Broth ½ cup
- Cherry 5 oz
- Raisins ½ cup
- Sugar 2 teaspoons
- Ground Black Pepper to taste
- Salt to taste
Step-by-Step Guide
Step 1
Place the whole chicken in a pot, cover with water, and boil for about 1 hour 15 minutes.
Step 2
Remove from the pot, cut into serving pieces, and strain the broth through cheesecloth.
Step 3
Soak the cherries in warm water and remove the pits.
Step 4
Rinse the raisins.
Step 5
Heat a skillet, toast the flour in clarified butter until golden, then add the broth.
Step 6
Add the raisins and cherries, sugar, season with salt and pepper, and bring to a boil.
Step 7
Place the pieces of chicken in the sauce and warm through.
Step 8
Serve on a plate with the sauce, garnished with finely chopped parsley.
