Chicken with Chanterelles in a Skillet
Ingredients
- Chicken Thighs 15 oz
- Pickled Chanterelles 5 oz
- Olive Oil 1½ tablespoons
- Butter 0 oz
- Ground Black Pepper to taste
- Ocean salt to taste
- 33% Cream 10 fl oz
- Parmesan Cheese 0 oz
- Arugula to taste
- Chili Flakes to taste
- Garlic 2 cloves
Step-by-Step Guide
Step 1
Thoroughly rinse the chanterelles.
Step 2
Finely chop the garlic.
Step 3
Heat both types of oil in a skillet.
Step 4
Place the chicken thighs in the skillet. Sauté for 5–6 minutes.
Step 5
Add salt.
Step 6
Add pepper.
Step 7
Flip and sauté for another 3–4 minutes.
Step 8
Chop the chanterelles coarsely.
Step 9
Add the mushrooms to the chicken and reduce the heat to medium.
Step 10
After 2–3 minutes, add the garlic and stir.
Step 11
Add salt.
Step 12
After 2–3 minutes, add the cream.
Step 13
Add pepper.
Step 14
Cover and simmer for about 10–12 minutes.
Step 15
Grate the parmesan.
Step 16
Sprinkle with parmesan and remove from heat.
Step 17
Transfer to a plate, garnish with arugula, season with chili, and serve.
