A quick and delicious option for a simple dinner when you have a can of beans gathering dust on the shelf and some chicken waiting in the fridge. If you add sweet bell peppers to the skillet, you'll get a loose interpretation of the Mexican dish—fajitas. Overall, this dish is great because the range of ingredients is limited only by your imagination: you can add broccoli, zucchini, and any other vegetables you have on hand. You can also enrich it with any available grains.
Ingredients
- "Petelinka Thigh Fillet" 20 oz
- Canned Baby Beets 1 can
- Onion 1 head
- Garlic 2 cloves
- Chinese green beans 5 oz
- Herbs to taste
- Paprika ½ spoons
- Mild Chili Spice to taste
- Dried Rosemary ½ spoons
- Salt to taste
- Ground Black Pepper to taste
- Vegetable Oil 0 fl oz
- Tomato Puree 10 fl oz
- Sugar to taste
Step-by-Step Guide
Step 1
Remove excess sinews from the chicken thighs and cut them into walnut-sized pieces.
Step 2
Dice the onion finely and mince the garlic.
Step 3
In a deep skillet, heat vegetable oil over high heat and sauté the chicken until golden brown. You can fry the meat in batches to prevent it from releasing its juices and stewing. Once cooked, transfer the meat to a clean dish.
Step 4
In the same skillet, sauté the onion until golden brown.
Step 5
Add the garlic to the onions, stir, and pour in the tomato puree.
Step 6
Return the chicken to the skillet, add salt and spices, stir, cover with a lid, and simmer on low heat for 20 minutes.
Step 7
Add the canned beans to the skillet, stir, and bring to a boil.
Step 8
Add the green beans, stir, bring to a boil, and then immediately remove from heat.
Step 9
When serving, sprinkle the chicken with beans with chopped herbs.
