Ingredients

  • Star anise 2 pieces
  • Apricot Jam 1 can
  • Poultry 1 piece
  • Dried Apricots 5 oz
  • Mild Chili Spice 1 piece
  • Grated Ginger Root 0 oz
  • Cinnamon 1 piece
  • Ground clove 5 pieces
  • Prunes 5 oz
  • Salt 0 oz

Step-by-Step Guide

Step 1

Wash and dry the chicken, rub it with salt, and place it in a baking bag or sleeve.

Step 2

Preheat the oven to 200°C.

Step 3

Pour the apricots along with the juice into the bag with the chicken, add all the other ingredients, and tie the bag, leaving some space between the bag and the chicken. Make a couple of holes in the bag for steam to escape.

Step 4

Place in the oven for 1 hour and 40 minutes. If a crust is desired, open the bag slightly 15-20 minutes before the cooking time is up.

Step 5

Once cooked, cut the chicken into pieces and place on a serving dish.

Step 6

Drain the liquid and save it. Pass the fruits through a sieve or blend them, adding liquid to achieve the desired consistency.

Step 7

Serve the chicken separately, and the sauce in a sauceboat.
