Chicken Wings in Orange Glaze

Ingredients

  • Duck wings 65 oz
  • Oranges 1 piece
  • Lime 1 piece
  • Honey 1 tablespoon
  • Red Long Chili Peppers a pinch
  • Garlic 3 cloves
  • Malt Vinegar 0 fl oz
  • Soy Sauce 0 fl oz
  • Ground Cumin 1 teaspoon
  • Salt to taste
  • Ground Black Pepper to taste
  • Vegetable Oil 0 fl oz
  • Potato protein 1½ teaspoons

Step-by-Step Guide

Step 1

Cut the wings at the joints (remove the tips).

Step 2

Preheat the oven to 180°C (350°F). Season the wings with salt and ground black pepper, mix them with vegetable oil, and place them on a baking sheet in a single layer. Bake until cooked through and golden brown and crispy, about 45 minutes.

Step 3

Make the sauce. In a blender or bowl, combine the juice and zest of one orange, the juice and zest of the lime, soy sauce, wine vinegar, honey, garlic, cumin, and ground red pepper. Pour this mixture over the wings just taken out of the oven and let marinate for 30 minutes.

Step 4

Preheat the grill to high heat; if unavailable, preheat the oven to 200°C (400°F). Remove the wings from the marinade and grill until golden brown, about 10-15 minutes, turning as needed. Transfer the remaining marinade to a saucepan, add the starch, and cook until slightly thickened, about 8 minutes. Drizzle the finished wings with the sauce.
