Ingredients
- Cilantro to taste
- Poultry 1 piece
- Bay leaf 1 piece
- Cinnamon 1 piece
- Honey 2 tablespoons
- Ground Cumin to taste
- Toasted Cumin Seeds to taste
- Ground coriander to taste
- Olive Oil 0 fl oz
- Chicken Broth 0 qt
- Garlic 2 cloves
- Medium-dry sherry ½ cup
- Shallot 3 pieces
Step-by-Step Guide
Step 1
Heat the olive oil in a large pot. Sauté the chicken, cut into pieces, until browned, then add finely chopped garlic and shallots. Cook until soft.
Step 2
Add the cinnamon stick, cumin seeds, and ground cumin. Cook for 10 minutes.
Step 3
Then add the sherry, honey, bay leaf, pour in the chicken broth, and bring to a boil. Cover and simmer for 30-35 minutes. Serve with fresh cilantro and couscous.
