Ingredients

  • Salt to taste
  • Poultry 20 oz
  • White Pepper (whole) to taste
  • Lemon 1 piece
  • Dill to taste
  • Garlic 4 cloves

Step-by-Step Guide

Step 1

Cut the chicken along the breastbone.

Step 2

Lay the bird flat on the cutting board, trim the wings down to the first joint, and remove the innards from the cavity.

Step 3

Carefully and evenly pound the whole chicken.

Step 4

Rub both sides with salt and white pepper (black pepper is not recommended as it may burn during cooking).

Step 5

Fry in a well-heated skillet with vegetable oil, under a press weighing 3–5 kg (using a special press lid, or placing something heavy on top). First, sear the back side until golden brown, then flip and fry the other side.

Step 6

Served with a wedge of lemon and a fragrant garlic sauce (a mixture of vegetable oil, finely chopped dill, and crushed garlic).
