Chicken Stew with Vegetables

Ingredients

  • Poultry 1 piece
  • Potato 10 oz
  • Garlic 4 cloves
  • Sweet Red Onion 2 heads
  • Tomatoes 4 pieces
  • Sweet Pepper 1 piece
  • Olive Oil 3 spoons
  • Salt to taste
  • Ground Black Pepper to taste
  • Thyme to taste

Step-by-Step Guide

Step 1

Cut the potatoes, tomatoes, bell peppers, and other vegetables in half, into slices, or leave them whole (if they are not too large), according to your preference. You can also add one whole chili pepper.

Step 2

Place the vegetables in a large bowl, drizzle with olive oil, and season with salt and pepper. Mix well and let them sit for a while (while you prepare the chicken).

Step 3

Cut the chicken into pieces, season with salt and pepper. Sauté in a skillet until golden brown.

Step 4

Preheat the oven to 355°F. Place the vegetables in a large roasting pan or ovenproof dish. Arrange the pieces of chicken on top and bake until cooked through, about 40 to 50 minutes.

Step 5

Serve garnished with fresh herbs.
