
Chicken Skewers with Couscous and Cucumber Salad

Ingredients
- Couscous 5 oz
- Skin-On Chicken Breasts 8 pieces
- Olive Oil to taste
- Tomatoes 2 pieces
- Cucumbers 4 pieces
- Cilantro 2 teaspoons
- Spanish onions ½ head
- Lemon 1 piece
- Barbecue sauce to taste
Step-by-Step Guide
Step 1
Pour the couscous into a pot, add 160 ml of cold water, cover with a lid, and let it sit for 5 minutes.
Step 2
Cut the chicken breasts into small pieces, thread them onto wooden skewers, and brush with barbecue sauce.
Step 3
Preheat the grill or barbecue. Grill the chicken skewers for about 10 minutes until cooked through.
Step 4
Meanwhile, fluff the couscous with a fork and transfer it to a bowl. Add diced cucumber, diced tomatoes, and finely chopped onion. Then add cilantro and mix well.
Step 5
Arrange the skewers on a platter, garnish with lemon wedges, and serve with the salad and barbecue sauce.
