Chicken Saltimbocca
Ingredients
- Skin-On Chicken Breasts 2 pieces
- Chopped Sage Leaves 8 pieces
- Wheat Flour 2 tablespoons
- Olive Oil 2 tablespoons
- Dry White Wine 5 fl oz
Step-by-Step Guide
Step 1
Place the chicken breast on a cutting board. Press down with one hand and use the other hand to slice each piece horizontally into two thinner pieces.
Step 2
Wrap the chicken slices in plastic wrap and gently pound them to make them evenly thin. Unwrap, season with salt and pepper.
Step 3
Attach a couple of sage leaves to the top of each piece using toothpicks (making sure the toothpicks are as parallel to the chicken surface as possible).
Step 4
Dip the bottom of the chicken in flour. Heat olive oil in a skillet and place the chicken sage-side down. Fry for one and a half to two minutes, then flip and cook for the same amount of time.
Step 5
Splash the wine into the skillet, then immediately remove the chicken. Let the wine simmer for another minute to create a sauce that can be drizzled over the chicken when serving.
