Ingredients
- Chopped Sage Leaves 2 tablespoons
- Orange Bell Peppers 1 piece
- Canned Corn 5 oz
- Mint 2 tablespoons
- Couscous 5 oz
- Chicken fillet 5 oz
- Olive Oil 3 tablespoons
- Courgette 2 pieces
- Chicken Broth 20 fl oz
- Malt Vinegar 3 teaspoons
Step-by-Step Guide
Step 1
Cook the couscous: pour the couscous into a bowl, cover with boiling broth, and stir. Cover with a lid and let sit for 20-25 minutes until the grains are soft and have absorbed the broth.
Step 2
In a skillet, heat 2 tablespoons of olive oil and sauté all the vegetables one by one, then add the chicken fillet.
Step 3
In a bowl, whisk the dressing: combine 1 tablespoon of olive oil with the vinegar and chopped mint.
Step 4
Combine the couscous, chicken, and vegetables, including the corn, in a bowl and mix. Add the dressing. Season with salt and pepper. Serve warm.
