Chicken Rolls with Capers and Anchovies
Ingredients
- Skin-On Chicken Breasts 4 pieces
- Anchovy fillet 4 pieces
- Capers 0 oz
- Onion 1 head
- Dry White Wine 5 fl oz
- Olive Oil 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Gently pound the chicken breasts.
Step 2
Place one anchovy fillet and a few capers on each breast.
Step 3
Roll the breast into a roll and secure with a toothpick.
Step 4
Heat olive oil in a pan along with butter and sauté the onion until translucent.
Step 5
Add the chicken rolls to the pan and fry them until golden brown.
Step 6
Season with salt and pepper.
Step 7
Pour in the white wine, increase the heat, bring to a boil, and wait for some of the wine to evaporate.
Step 8
Cover with a lid and simmer on low heat for 20 minutes. Serve hot.
