Chicken Roll-Ups with Vegetables
Ingredients
- Tomatoes 2 pieces
- Skin-On Chicken Breasts 20 oz
- Orange Bell Peppers 1 piece
- Fresh basil leaves ½ teaspoon
- Ground Nutmeg ½ teaspoon
Step-by-Step Guide
Step 1
Blanch the tomatoes, peel them, and cut into cubes.
Step 2
Remove the stem and seeds from the bell pepper and cut it into cubes as well.
Step 3
In a skillet, pour in 2 tablespoons of water and add the tomatoes and bell pepper, season with salt, add nutmeg and basil, and simmer for 15 minutes over medium heat.
Step 4
Cut the chicken breast lengthwise in half.
Step 5
Pound each piece, season with salt and pepper.
Step 6
Place the filling on the pounded chicken and roll them up.
Step 7
Bake in the oven at 390°F for about 40 minutes.
