Ingredients

  • Natural Yogurt 10 oz
  • Dijon Mustard 2 spoons
  • Scallions 1 bunch
  • Butter 2 spoons
  • Fresh basil leaves 2 spoons
  • Skin-On Chicken Breasts 4 pieces
  • Salt to taste
  • Breadcrumbs 1 glass
  • Grated Pecorino Pepato Cheese 0 oz
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Make the sauce. Blend together 1 part yogurt with 1 tablespoon of mustard and finely chopped green onions (using a blender is best). Set the sauce aside to warm up to room temperature.

Step 2

Preheat the oven to 200°C. Lightly grease the parchment paper or foil with melted butter.

Step 3

The chicken breasts should be skinless and boneless. Place 1/2 teaspoon of basil in the center of each chicken breast, add salt and pepper, and roll them up. Repeat the same with the remaining three.

Step 4

In a bowl, mix the remaining yogurt and mustard, and in a shallow dish, combine the breadcrumbs with the Parmesan cheese. Dip the chicken rolls first in the yogurt, then in the breadcrumbs. Place them on the prepared baking sheet and brush with the remaining oil.

Step 5

Bake until golden brown on the crust and the inside is white, about 30 minutes (it took me less time - be attentive).

Step 6

Serve hot, with sauce.
