Chicken pieces in almond crust with brown rice
Ingredients
- Chicken fillet 4 pieces
- Salt ¾ teaspoon
- Ground Black Pepper ¼ teaspoon
- Wheat Flour ¼ cup
- Buttermilk 5 oz
- Honey-Mustard Dressing 2 tablespoons
- Chopped almonds 5 oz
- Breadcrumbs ½ cup
- Basmati rice 5 oz
- Scallions 0 oz
Step-by-Step Guide
Step 1
Preheat the oven to 445°F.
Step 2
Cook the rice in boiling water until done. Drain and keep warm.
Step 3
Place each breast between 2 sheets of plastic wrap and pound to a thickness of about 1.2 cm. Sprinkle with 0.25 teaspoon of salt and pepper.
Step 4
Put the flour in a bag and add the chicken breasts in batches. Shake well to coat the meat completely with flour.
Step 5
In a bowl, mix the buttermilk and mustard, and in another bowl, mix the almond flakes and breadcrumbs. Dip the chicken first in the buttermilk, then coat in the almond mixture.
Step 6
Heat a large skillet over high heat and lightly grease with vegetable oil. Place the chicken in the skillet and fry for 1 minute, then flip and transfer the skillet to the oven for 9 minutes until the chicken is cooked through.
Step 7
Season the rice with salt and add finely chopped green onions. Serve with the chicken.
