Chicken Paella with Chorizo
Ingredients
- Olive Oil 3 tablespoons
- Orange Bell Peppers 1 piece
- Skin-On Chicken Breasts 20 oz
- Chorizo 5 oz
- Fresh Mushrooms 5 oz
- Garlic 3 cloves
- Citrus Zest Mix 1 tablespoon
- Tomatoes 25 oz
- Fresh Rose Hips 1 tablespoon
- Chopped Sage Leaves 2 tablespoons
- Chinese green beans 5 oz
- Water 3 tablespoons
- Saffron ¼ teaspoon
- Rice 15 oz
- Lemon 1 piece
- Chicken Broth 25 fl oz
Step-by-Step Guide
Step 1
Heat the olive oil in a large skillet or paella pan over medium heat. Add the sliced bell pepper and sauté for 6 minutes until soft. Remove from the skillet.
Step 2
In the skillet, add the diced chicken and cook for 10 minutes until golden brown. Remove. Add the sliced chorizo and sauté for 5 minutes until golden brown. Remove.
Step 3
Add the finely chopped mushrooms, garlic, lemon zest, and cook over medium heat for 5 minutes. Add the sliced tomatoes, bell pepper, and cook for another 5 minutes until the tomatoes are soft.
Step 4
Add the chopped green beans, rosemary, parsley, saffron dissolved in water, rice, chicken, and chorizo. Quickly stir in the broth.
Step 5
Reduce the heat and simmer for 30 minutes. Remove from heat, cover, and let sit for 10 minutes. Serve with lemon wedges.
