Ingredients

  • Chicken Liver 10 oz
  • Onion 10 oz
  • Vegetable Oil 0 fl oz
  • Butter 0 oz
  • Port Wine 5 fl oz
  • Dried cranberries with sugar 0 oz
  • White Balsamic Cream to taste
  • Salt to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Prepare all the ingredients.

Step 2

Slice the onion into half-rings.

Step 3

In a frying pan, heat vegetable oil (30 ml) and sauté the onion over low heat, stirring constantly. First, it should become translucent, then caramelize and turn golden.

Step 4

Add 40 grams of butter to the onion, increase the heat, and fry for 2 minutes, then remove from heat.

Step 5

Clean the chicken liver from membranes and blood clots.

Step 6

In a separate frying pan, heat a mixture of vegetable and butter and fry the liver on all sides until a crust forms. Season with salt and pepper.

Step 7

Pour the port wine over the liver, stir, and increase the heat to evaporate all the moisture.

Step 8

Place the onion and liver on a plate, sprinkle with dried cranberries.

Step 9

Serve the liver with onions and port wine, drizzled with balsamic cream.
