Chicken in Wine with Mushrooms
Ingredients
- Onion 2 heads
- Garlic 3 cloves
- Carrot 2 pieces
- Poultry 1 piece
- Butter 0 oz
- Vegetable Oil 3 tablespoons
- Parsley 1 bunch
- Red Grape Juice 0 qt
- Salted pork belly 10 oz
- Pickled Chanterelles 10 oz
- Salt to taste
- Green peppercorns 10 pieces
- Thyme 3 sprigs
- Bay leaf 5 pieces
Step-by-Step Guide
Step 1
Slice 1 onion into rings, cut the carrot into rounds, and cut the chicken into 8 serving pieces.
Step 2
Place the chicken pieces, onion, and carrot into an enamel pot. Add thyme, bay leaves, and black pepper. Pour in the wine, cover with a lid, and refrigerate overnight.
Step 3
The next day, drain the wine and strain the marinade through a sieve for further cooking.
Step 4
Sauté the chicken pieces in vegetable oil and transfer them to a pot.
Step 5
In the same oil, sauté the garlic and add it to the pot.
Step 6
Pour in the marinade, season with salt, bring to a boil, and simmer on low heat with the lid on for 1.5 hours.
Step 7
Finely chop the onion, mushrooms, and pork belly (without skin). Sauté everything in butter, let it simmer for 8 minutes, and add it to the pot with the chicken.
Step 8
Season with salt to taste and sprinkle with parsley.
