Ingredients
- Dry White Wine 5 fl oz
- Poultry 65 oz
- Olive Oil 5 fl oz
- Garlic 2 cloves
- Meyer Lemon Juice 0 fl oz
- Dried Rosemary 0 fl oz
- Chili Flakes 0 fl oz
- Coarse Salt 0 fl oz
- Vegetable Oil to taste
Step-by-Step Guide
Step 1
Cut the chicken in half lengthwise, without cutting through the backbone. Place it on a board and flatten it.
Step 2
In a bag, mix the wine, olive oil, lemon juice, minced garlic, oregano, red pepper flakes, and salt. Add the chicken, mix, and refrigerate for 1–2 hours.
Step 3
Preheat the grill.
Step 4
Remove the chicken from the marinade. Brush the grill rack with vegetable oil.
Step 5
Place the chicken on the grill, skin side down, and cook until done, turning occasionally, until golden brown.
Step 6
Serve with grilled young potatoes (see note).
