Ingredients
- Poultry 5 lbs
- Red Grape Juice 0 qt
- Spanish onions 6 pieces
- Celery salt 20 oz
- Thyme 6 sprigs
- Fresh Rose Hips 4 sprigs
- Garlic 3 cloves
- Olive Oil 5 fl oz
- Butter 0 oz
- Carrot 2 pieces
- Green peppercorns 0 oz
- Salt to taste
- Lentils 10 oz
Step-by-Step Guide
Step 1
Peel and chop the vegetables, place them on a baking sheet, drizzle with olive oil, and put in a preheated oven at 355°F for 15 minutes.
Step 2
Cut the chicken into pieces, coat in flour, and fry in a mixture of olive oil and butter until golden brown, meaning it will be almost cooked through.
Step 3
In a pot or Dutch oven with a thick bottom, place the chicken pieces, then layer the vegetables on top. Season with salt and pepper, add the rosemary and thyme leaves. Pour in the bottle of wine, cover with a lid, and cook over medium heat for about 30 minutes. Do not disturb or stir the pot! Preheat the oven to 210°F. Then, let it simmer covered for another 40 minutes.
Step 4
While the chicken is simmering in the oven, cook the lentils, and at the very end, add a ladle of sauce from the pot to them.
Step 5
Serve the lentils on a plate, topped with the chicken. Strain the sauce and serve separately.
