Ingredients

  • Poultry 20 oz
  • Butter 0 oz
  • Salt to taste
  • Ground Black Pepper to taste
  • Apple Cider Vinegar ½ cup
  • Honey 5 tablespoons
  • Dried cranberries with sugar 5 oz
  • Dried Rosemary to taste
  • Parsley to taste

Step-by-Step Guide

Step 1

Cut the chicken fillet lengthwise for frying. Rub with butter (2/3 of the butter stick) and sprinkle with salt and pepper to taste. Fry evenly on both sides until a crust forms. Then add a little water and simmer for about 10 minutes.

Step 2

For the sauce, mix all the remaining ingredients in a small saucepan and bring to a simmer. It should reduce by about half, achieving a jam-like consistency. The flavor should be honey-like with a slight berry tartness.

Step 3

Before serving, coat the fillet with the sauce and garnish with parsley. Serve the sauce separately as well.

Step 4

This dish pairs very well with fresh rolls, sliced vegetables, and a glass of red mulled wine.
