Chicken in honey-lemon glaze
Ingredients
- Poultry 2 pieces
- Coarse Salt to taste
- Meyer Lemon Juice 2½ glasses
- Ground Black Pepper to taste
- Honey 5 teaspoons
Step-by-Step Guide
Step 1
Place each chicken in a plastic bag and pour 1.25 cups of juice into each one. Seal tightly and refrigerate for at least 6 hours, preferably overnight.
Step 2
Preheat the oven to 445°F. Pat the chickens dry and rub them with salt and pepper. Place them on a baking sheet, breast side down, and roast for 15 minutes.
Step 3
Reduce the oven temperature to 375°F and roast for another 45 minutes.
Step 4
Flip the chickens breast-side up and generously brush them with honey. Cook for about 55 more minutes until done and golden brown, remembering to baste with the juices from the pan several times and brush the chickens with honey. Transfer to plates and wrap in foil. Let rest for 15 minutes.
Step 5
Pour the juices from the baking tray into a saucepan, heat them up, and season with salt and pepper. Drizzle over the chicken and serve.
