Ingredients
- Coriander essential oil 1 teaspoon
- White Pepper (whole) 0 oz
- Toasted Cumin Seeds ½ teaspoon
- Cardamom 2 pieces
- Turmeric 2 teaspoons
- Mild Chili Spice 1 piece
- Garlic 3 cloves
- Shallot 1 piece
- Ginger 0 oz
- Lime Juice 1 piece
- Orange zest 1 piece
- Salt to taste
- Coconut Milk 2 cups
- Poultry 5 lbs
- Chicken Broth 1 cup
- Fish Oil 2 tablespoons
- Sugar 1 tablespoon
- Basil to taste
- Chopped Green Onions 2 tablespoons
- Ground Nutmeg a pinch
- Lemongrass 1 stalk
Step-by-Step Guide
Step 1
In a medium heat, roast the seeds from two cardamom pods, coriander, cumin, and white peppercorns for about 1 minute, until the seeds start to pop and brown.
Step 2
Transfer the seeds to a blender along with chopped cilantro leaves, ground turmeric, ground nutmeg, seedless chili, garlic, chopped shallot, chopped lemongrass, chopped ginger, lime zest, lime juice, and 2 tablespoons of water. Blend until smooth and homogeneous. Season the paste with salt to taste.
Step 3
In a pot, combine the paste with coconut milk and heat over medium heat, stirring, until the oil starts to separate from the milk, about 12 minutes.
Step 4
Remove the chicken from the bones, cut into small pieces, and sauté in vegetable oil for a few minutes until golden brown. Add the chicken to the milk mixture and cook, stirring, until done, about 20 minutes. Add broth, fish sauce, sugar, and bring to a boil.
Step 5
Remove from heat and serve in bowls with cooked rice. Garnish with basil and sliced chili.
