Chicken in Green Curry
Ingredients
- Coconut Liqueur 10 fl oz
- Black Bean Paste 4 tablespoons
- Skin-On Chicken Breasts 4 pieces
- Eggplants ½ piece
- Coconut Milk 10 fl oz
- Brown Sugar 2 tablespoons
- Fish Oil 2 tablespoons
- Banana Leaves 4 pieces
- Fresh basil leaves 20 pieces
- Mild Chili Spice 2 pieces
Step-by-Step Guide
Step 1
Heat a wok over low heat, add the cream, and bring to a boil.
Step 2
Add the curry paste, simmer for 1 minute, then add the sliced chicken. Cook the chicken until done, then add the milk and sliced eggplant. Cook for 1-2 minutes or until the eggplant is tender. Add the sugar, fish sauce, lime leaves, and half of the basil. Mix well.
Step 3
Top with the remaining basil, chopped chili, and drizzle with cream.
