Chicken in Creamy Dijon Mustard Sauce

Ingredients

  • Poultry 1 piece
  • Shallot 2 pieces
  • Dry White Wine 5 fl oz
  • Vegetable Oil 1 tablespoon
  • 33% Cream 0 fl oz
  • Chicken Broth 5 fl oz
  • Dijon Mustard 2 tablespoons
  • Scallions to taste

Step-by-Step Guide

Step 1

Wash the chicken, dry it, and cut it into pieces. Season each piece with salt and pepper. Preheat the oven to 390°F.

Step 2

In a skillet, heat the vegetable oil and fry the chicken pieces in two batches. First, skin-side down until golden brown, then on the other side for 5 minutes each.

Step 3

Transfer the cooked chicken to a baking sheet and place it in the oven on the middle rack. Cook for about 15–20 minutes, avoiding burning the skin. There are at least two ways to do this: periodically spoon the juices from the baking sheet over the chicken or cover the baking sheet with foil after about 10 minutes.

Step 4

Meanwhile, in the skillet where the chicken was fried, add finely chopped shallots, wine, and broth, bring to a boil, then reduce the heat after 3 minutes, add the cream, and simmer for another minute while stirring constantly.

Step 5

Chop the green onions. Before serving, drizzle the chicken with the sauce and sprinkle with the onions.
