Description

Ingredients

  • Olive Oil 1 tablespoon
  • Garlic 2 cloves
  • Apricot Jam ½ cup
  • Baking Tomatoes 30 oz
  • Coarse Salt 2½ teaspoons
  • Balsamic Vinegar 1 tablespoon
  • Ground Black Pepper ¾ teaspoon
  • Poultry 5 lbs

Step-by-Step Guide

Step 1

Preheat the oven to 390°F.

Step 2

Heat the olive oil in a small saucepan over medium heat. Add the minced garlic and cook for 1 minute. Then add the tomatoes, jam, vinegar, and half of the salt and pepper. Bring to a boil, reduce the heat, and simmer for 15 minutes until the sauce slightly thickens.

Step 3

Meanwhile, cut the chicken into pieces, rinse under cold water, and pat dry with a paper towel. Place in a baking dish or on a baking sheet, season with the remaining salt and pepper. Pour the prepared sauce over the chicken and bake in the oven for 1 hour until cooked through, basting with the sauce once during cooking. Serve with plenty of sauce.
