
Chicken Hearts in Mustard-Cheese Sauce

Ingredients
- Chicken hearts 20 oz
- Champignons 5 oz
- Cream 5 fl oz
- Olive Oil 0 fl oz
- Dijon Mustard 2 spoons
- Salt to taste
- Ghee 2 spoons
- Wheat Flour 1 tablespoon
- Butter 1 tablespoon
- Grated Pecorino Pepato Cheese 5 oz
Step-by-Step Guide
Step 1
Mix the oil, 1 tablespoon of mustard, pepper, and a little salt. Place the chicken hearts in this mixture and refrigerate for 1 hour.
Step 2
Then, sauté the hearts in clarified butter on all sides. Add the sliced mushrooms to them.
Step 3
After a couple of minutes, pour in the sauce and cream, and gradually heat while stirring.
Step 4
Form a ball from the flour and butter, then add it along with the mustard to the sauce and dissolve it. Remove the sauce from heat and stir in half of the grated cheese.
Step 5
Simmer covered for another 5-7 minutes.
Step 6
Sprinkle with grated cheese and mix well. Once the cheese has melted, remove from heat.
