Ingredients

  • Cilantro 1 bunch
  • Courgette 1 piece
  • Chicken fillet 4 pieces
  • Grated Pecorino Pepato Cheese 5 oz
  • Shallot 2 pieces
  • Herbed Cream Cheese to taste
  • Ground Black Pepper to taste

Step-by-Step Guide

Step 1

Preheat the oven to 355°F.

Step 2

Rinse the fillet, cut it into cubes, and blend it in a blender; add salt and pepper to the resulting mixture.

Step 3

Peel the shallots, slice them into half-rings, and sauté until golden.

Step 4

Spread the mixture on the bottom of a baking dish (if using a silicone mold, there is no need to grease the bottom; if using a different material, grease it with oil).

Step 5

Top the mixture with the sautéed shallots.

Step 6

Next, add the chopped cilantro.

Step 7

Slice the zucchini into thin rings and place them on top of the greens.

Step 8

Sprinkle the grated parmesan on top of the mixture.

Step 9

Bake for about 20 minutes (important — do not over-dry the mixture).
