Ingredients

  • Farm fresh eggs 4 pieces
  • Skin-On Chicken Breasts 4 pieces
  • Water 3 tablespoons
  • Wheat Flour 0.7 cups
  • Salt 1 teaspoon
  • Ground Black Pepper a pinch
  • Olive Oil ¼ cup
  • Lemon ½ piece
  • Dry White Wine ½ cup
  • Chicken Broth 1 cup
  • Butter 2 tablespoons
  • Meyer Lemon Juice 0 fl oz
  • Chopped Sage Leaves ¼ cup
  • Garlic 3 heads
  • Grated Pecorino Pepato Cheese 3 tablespoons

Step-by-Step Guide

Step 1

Cut the chicken breasts and gently pound them;

Step 2

Crack the eggs and beat them. Add Parmesan, ½ teaspoon of salt, and black pepper – mix everything;

Step 3

Pour the flour onto a plate and mix with the remaining salt and black pepper;

Step 4

Heat olive oil in a skillet, add butter, and mix;

Step 5

Dredge the chicken breasts in flour, then in the egg-cheese batter, and fry in oil on both sides (for 1-2 minutes on each side) and place on a plate;

Step 6

Finely chop the garlic and lightly sauté it in the oil used for frying the chicken;

Step 7

Add white wine and chicken broth to the oil, the juice of half a lemon, and parsley. Let it simmer for a bit (about 5 minutes);

Step 8

Place the chicken fillets in the boiling sauce and sauté on both sides for 2-3 minutes. During frying, place lemon slices on the chicken;

Step 9

Season with additional salt and pepper to taste;

Step 10

Serve hot with the sauce in which the fillets were fried.
