
Chicken Fillet with Pineapple and Cheese

Description
2 teaspoons of vinegar can be replaced with 1 teaspoon of lemon juice. For added spiciness, you can add more spices while frying the chicken. We enjoyed potatoes as a side dish.
Ingredients
- Chicken fillet 2 pieces
- Canned Pineapple Chunks ½ can
- Grated Pecorino Pepato Cheese 5 oz
- Spices 2 teaspoons
- Salt 1 teaspoon
- Vegetable Oil 2 tablespoons
- Sugar 2 teaspoons
- Vinegar essence 1 teaspoon
Step-by-Step Guide
Step 1
In a bowl, mix the oil, spices, vinegar, salt, and sugar, and marinate the fillet, cut into small pieces — 20 minutes is enough.
Step 2
Place the marinated chicken pieces in a skillet and fry over low heat until cooked through, uncovered.
Step 3
Top with pineapple chunks, and then with grated cheese, creating three layers (chicken, pineapple, cheese). Cover with a lid and let simmer over low heat. After a few minutes, the cheese will melt — the dish is ready.
