  • Salt ½ teaspoon
  • Grated Ginger Root 1 teaspoon
  • Vegetable Oil 0 fl oz
  • Chicken fillet 20 oz
  • Pineapple ½ piece
  • Brown Sugar 0 oz
  • Lime 1 piece

Step-by-Step Guide

Step 1

Peel the garlic, finely chop it, add the spices, salt, and grind well in a mortar until a paste-like consistency is achieved.

Step 2

Pour in the vegetable oil and mix to create a marinade.

Step 3

Cut the chicken fillet across the grain into strips about 2 cm thick. Place in a bowl and add the marinade.

Step 4

Mix to ensure the meat is evenly coated with the marinade, and let it sit in a cool place for an hour.

Step 5

In a preheated skillet, add a tablespoon of oil, place the sugar, and squeeze in the lime juice. Leave the lime peels in the skillet for 1–2 minutes for flavor. Heat over medium heat, stirring until the sugar dissolves.

Step 6

Add the meat to the skillet along with the marinade. Stir well.

Step 7

Peel the pineapple and cut it into cubes. You should have about 300–350 grams of pulp.

Step 8

Add the pineapple, mix, and cook covered over medium heat for 4–5 minutes until the chicken is cooked through.

Step 9

Do not overcook the meat to prevent it from becoming dry.

Step 10

Serve hot; boiled rice makes an excellent side dish.
