Chicken Fajitas with Guacamole

Ingredients

  • Orange Bell Peppers 1 piece
  • Spanish onions 1 head
  • Skin-On Chicken Breasts 2 pieces
  • Smoked salt 1 teaspoon
  • Ground Cumin a pinch
  • Lime 3 pieces
  • Olive Oil to taste
  • Ocean salt to taste
  • Ground Black Pepper to taste
  • Tortillas 4 pieces
  • Natural Yogurt 5 fl oz
  • Avocado 10 oz
  • Mild Chili Spice 1 piece
  • Cheshire Cheese 5 oz
  • Marinated cherries 15 pieces
  • Cilantro 1 bunch
  • Olive Oil to taste

Step-by-Step Guide

Step 1

Preheat a grill pan. Cut the red bell pepper in half and remove the seeds, then slice it into strips. Peel the onion, cut it in half, and chop it.

Step 2

Slice the chicken lengthwise into long strips that are the same size as the pepper. Place the chicken, pepper, and onion in a bowl, add paprika and cumin. Squeeze the juice of half a lime into the bowl, drizzle with olive oil, season with salt and pepper, mix well, and let marinate for 5 minutes.

Step 3

Meanwhile, finely chop the chili, roughly chop the tomatoes and cilantro along with the stems, place them in a separate bowl, and add salt and pepper, as well as the juice of the remaining half lime. Drizzle with extra virgin olive oil.

Step 4

Using tongs, place all the pieces of chicken and peppers along with the onion onto the preheated pan and fry for 6-8 minutes until the chicken is golden brown. Continuously turn the chicken and peppers to prevent them from burning.

Step 5

Warm the tortillas in the oven or microwave. Arrange the warm tortillas on plates, place the pan on the table on a heatproof stand. Squeeze the juice of the remaining limes directly into it. Serve separately on plates with yogurt, guacamole, grated cheddar, and tomato salsa.
