Chicken cutlets with creamy herb sauce

Ingredients

  • Sorrel to taste
  • Wild Garlic Greens to taste
  • Parsley to taste
  • Salt to taste
  • Ground Black Pepper to taste
  • Cream 5 fl oz
  • Dry White Wine 5 fl oz
  • Vegetable Oil 2 tablespoons
  • Milk 5 fl oz
  • Chicken Egg 1 piece
  • White bread 4 pieces
  • Onion 2 heads
  • Ground meat 15 oz

Step-by-Step Guide

Step 1

Peel and chop the onion. Heat a little vegetable oil in a frying pan, add half of the onion, and sauté for about 3 minutes until soft.

Step 2

Soak the bread in milk, then lightly squeeze it out.

Step 3

Combine the ground chicken, soaked bread, sautéed onion, and egg, then season with salt and pepper.

Step 4

Form cutlets from the mixture and fry in vegetable oil for 3 minutes on each side.

Step 5

Transfer the cutlets to a microwave-safe dish and cook for 5 minutes at 900 watts.

Step 6

Wash and roughly chop the sorrel, wild garlic, and parsley. Place the remaining onion and herbs in a microwave-safe container, pour in the wine, and cook for 4 minutes at 900 watts.

Step 7

Pour the cream into the sauce, stir, and return to the microwave for 2 minutes. Let it cool slightly, transfer to a blender, and blend until smooth.

Step 8

Place the hot cutlets on a plate and drizzle with the sauce.
