Ingredients
- Chicken fillet 30 oz
- Onion 2 pieces
- Starch film 2 teaspoons
- Hard Cheese 5 oz
- Butter 0 oz
- Dill to taste
- Chicken Egg 2 pieces
- Breadcrumbs to taste
- Wheat Flour to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Prepare the filling: grate the cheese and butter on a fine grater. Finely chop the dill. Mix the cheese, butter, and dill until smooth. Place in the refrigerator.
Step 2
Wash the fillet, cut it into small pieces, and grind it with the onion using a meat grinder. Season with salt and pepper to taste, add starch, and knead the mixture well. I prefer to use starch instead of egg, as it makes the cutlets juicier and helps them hold their shape better (especially for chicken cutlets).
Step 3
Form the cutlets (it's better to do this with wet hands): place the chilled filling on a patty of the mixture, cover it with another patty. Shape it into an oval cutlet. Dredge it in flour, then in egg, and finally in breadcrumbs. Place on a plate or board. Repeat with the remaining mixture. It's best to chill the cutlets a bit before frying. I did this: I formed cutlets from half of the mixture, placed them in the refrigerator, and in the meantime, made cutlets from the remaining mixture. Then, while frying the first batch, the second batch was chilling in the refrigerator.
Step 4
Fry the cutlets in vegetable oil in a well-heated skillet until golden brown.
