Ingredients
- Chicken fillet 20 oz
- Passata Tomato Sauce 4 tablespoons
- Egg white 2 pieces
- 10% cream 5 fl oz
- Fresh Mushrooms 10 pieces
- Green Peas 5 oz
- Sage 1 stem
- Scallions 1 bunch
- Butter 1 teaspoon
- Wheat Flour 0 oz
- Olive Oil 1 tablespoon
- Salt to taste
- Apple Wine 5 fl oz
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Pass the chicken meat through a meat grinder. Add cream, chopped green onions, salt, and pepper. Whip the egg whites and gently fold them into the minced meat. Shape into cutlets, coat in flour, and fry in a mixture of olive oil and butter with sage. Then pour in the wine, add mushrooms and peas, and simmer until cooked.
Step 2
Place the cutlets on a plate and drizzle with the sauce containing mushrooms and peas.
