Chicken Breasts with Onions
Main Dishes • Mexican
Description
You can serve buckwheat porridge as a side dish. There are other cooking options, for example, in this one: use a bit more onion, layer it all on the bottom, place the chicken pieces on top, and bake in the oven at 180 degrees Celsius for about an hour. In another variation, you should place a bit of chopped dried mushrooms—such as porcini or birch boletes—under the onions; this gives an incredible aroma! Cook in a ceramic pot in the oven, also on low heat.
Ingredients
- Onion 2 heads
- Skin-On Chicken Breasts 4 pieces
- Butter 1 tablespoon
- Bay leaf to taste
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Slice the onion into half-rings.
Step 2
In a thick-walled pot (preferably with a non-stick surface), place a small piece of butter.
Step 3
Layer 2/3 of the onion on top.
Step 4
Add the bay leaf and whole peppercorns.
Step 5
Place the chicken breasts on top of the onions.
Step 6
Add a little salt.
Step 7
Layer the remaining onion on top.
Step 8
Cover the pot with a lid and set it on very low heat.
Step 9
And forget about the pot for an hour and a half. Do not open, stir, or add water! The chicken will cook perfectly in its own juices and the onion sauce.
Step 10
After 90 minutes, take it out, serve, and enjoy life.
