- Breadcrumbs 1⅕ cups
- Fresh basil leaves 1 tablespoon
- Salt 1 teaspoon
- Dried Chamomile 1 tablespoon
- Ground Black Pepper 1 teaspoon
- Olive Oil 2 tablespoons
- Passata Tomato Sauce 2 cups
- Grated Pecorino Pepato Cheese 2 tablespoons
- Skin-On Chicken Breasts 2 pieces
- Dried Rosemary 1 tablespoon
- Melted Cheese 5 oz
Step-by-Step Guide
Step 1
Preheat the oven to 500°F.
Step 2
Mix the herbs, salt, pepper, and breadcrumbs in a shallow dish. Dredge the chicken breasts in the mixture and shake off the excess.
Step 3
Heat the olive oil in a large oven-safe skillet over medium heat. Add the chicken and sauté until browned, about 3 minutes on each side. Remove the skillet from heat.
Step 4
Spread the tomato sauce around the chicken. Sprinkle Parmesan cheese on each chicken breast. Place slices of mozzarella on top.
Step 5
Bake, covered with foil, for 10 minutes, then remove the foil and bake for another 5 minutes, until the cheese is melted and the chicken is cooked through.
