Chicken breast with thyme and lemon-garlic butter
Ingredients
- Chicken fillet 5 lbs
- Courgette 0 lbs
- Garlic 1 head
- Olive Oil 5 fl oz
- Butter 5 oz
- Parsley 0 oz
- Thyme 0 oz
- Citrus Zest Mix 1 tablespoon
- Salt to taste
- Ground Black Pepper to taste
Step-by-Step Guide
Step 1
Mix room temperature butter with chopped parsley, crushed garlic, and lemon zest. Place the mixture in the refrigerator to slightly firm it up.
Step 2
Pound the chicken breasts and cut them into pieces about 7–10 cm in size, and slice the zucchini into rounds that are 5 mm thick.
Step 3
Mix the olive oil with the thyme leaves. Soak the zucchini in this oil, then use the leftover oil to coat the chicken.
Step 4
Preheat the grill pan and sauté the zucchini on both sides for thirty seconds each. Transfer to a plate and keep warm.
Step 5
In the same grill pan, sear the chicken breasts — first on the skin side for two to three minutes, then for another one and a half to two minutes on the other side. Season with salt and pepper.
Step 6
Place small cubes of butter with garlic and lemon zest on pieces of sautéed chicken. Serve with zucchini.
