Description

We all remember the timeless classic — melon plus prosciutto. Try a more geographically familiar version by pairing grilled chicken breast with a fruit salsa made of watermelon, apple, and melon. To avoid it being dull and bland, you can marinate the chicken breast beforehand in a mixture of soy sauce, garlic, and orange juice, adding brightness to the dish without extra calories. This is exactly how they do it at The Bistro, much to the delight of those constantly watching their weight. Recipe by Michael Smith, chef at The Bistro.

Ingredients

  • Chicken fillet 10 oz
  • Soy Sauce 0 fl oz
  • Garlic 1 clove
  • Oranges 1 piece
  • Watermelon 5 oz
  • Watermelon 5 oz
  • Apple ½ pieces
  • Celery stalk 0 oz
  • Scallions 0 oz

Step-by-Step Guide

Step 1

Pound the chicken fillet to a thickness of 5 mm, cut it in half, and marinate it in soy sauce, minced garlic, and orange juice (preferably overnight).

Step 2

Sauté in a small amount of oil for 3 minutes on each side, then remove from heat and let the fillet rest.

Step 3

Peel the watermelon, melon, and apple, removing the skin and seeds. Cut them into small cubes (2-3 mm) along with the celery, and mix well.

Step 4

Place the salsa on a plate using a ring mold, arrange the chicken fillet alongside it, and garnish with large green onion feathers.
