Chicken Breast with Curry Rice

Ingredients

  • Sweet Pepper ½ piece
  • Skin-On Chicken Breasts 1 piece
  • Onion 2 pieces
  • Carrot 1 piece
  • Potato 1 piece
  • Rice 1 cup
  • Water 2 cups
  • Salt to taste
  • Ground Black Pepper to taste
  • Mild Chili Spice to taste
  • Red Curry Powder 2 teaspoons
  • Sour Cream 1 tablespoon
  • Garlic 2 cloves

Step-by-Step Guide

Step 1

Cut the chicken breast across the grain, holding the knife at a slight angle. Tenderize the pieces on both sides, seasoning with salt and black pepper. Then, grill the pieces in a grill pan (without oil).

Step 2

Sauté 1 sliced onion in vegetable oil. Add half of the grated carrot, diced sweet pepper, and peeled tomato, as well as chili pepper to taste.

Step 3

Combine the sautéed chicken pieces with the vegetables, add a tablespoon of mayonnaise or sour cream (to your taste), pour in a small amount of water, and simmer for 25-30 minutes under a lid.

Step 4

In a thick-walled pot (preferably a cauldron), sauté 1 finely chopped onion and the remaining half of the grated carrot.

Step 5

Rinse the rice well, combine it with the onion and carrot, pour in 2 cups of boiling water, and set on low heat, remembering to salt to taste.

Step 6

Heat the minced garlic with vegetable oil in a pan, then add 2 teaspoons of curry powder. The spices will begin to release their aroma into the oil. Combine the heated garlic and spices with the rice.

Step 7

The rice cooks for about 15-20 minutes. Remove the pot from heat after the rice has absorbed all the water. Leave it covered to steam. As a result, you will have a simple and very tasty meal of chicken breast with rice as a side.
