
Chicken Baked with Vegetables

It is very delicious to serve with rice.
Ingredients
- Tomatoes 5 oz
- Chicken Drumstick 30 oz
- Orange Bell Peppers 2 pieces
- Onion 1 piece
- Fresh Rose Hips 3 sprigs
- Garlic 3 cloves
- Marinated cherries 5 oz
Step-by-Step Guide
Step 1
Season the drumsticks with salt and pepper and fry until golden brown. Place in a greased baking dish.
Step 2
Dice the tomatoes and one bell pepper, cut the other pepper into strips, slice the onion into half-rings, and mince the garlic.
Step 3
In the same pan where the chicken was fried, sauté the onion, then add the diced tomatoes and pepper, cooking over high heat for 5 minutes. Towards the end, add the garlic and leaves from 1 sprig of rosemary (I used dried), and season with salt and pepper.
Step 4
Spread the sauce over the chicken. Top with strips of pepper, whole cherry tomatoes, and 2 sprigs of rosemary.
Step 5
Bake for about 25 minutes at 390°F.
