Chicken baked with dried fruits
Ingredients
- Breadcrumbs ½ cup
- Poultry 1 piece
- Lemon 1 piece
- Orange zest 1 piece
- Prunes 5 oz
- Raisins 3 tablespoons
- Dried Apricots 5 oz
- Crabapples 2 pieces
- Sugar 4 tablespoons
- Salt to taste
- Ground Black Pepper to taste
- Apple Wine 10 fl oz
Step-by-Step Guide
Step 1
Rub the prepared chicken with salt and pepper and stuff it. For the stuffing, mix the grated zest of the lemon and orange with the fruit pulp and breadcrumbs.
Step 2
Preheat the oven to 200°C (392°F).
Step 3
Tie the chicken legs with twine, place on a baking sheet, and cook for about 50 minutes.
Step 4
Wash the apples, remove the core, and cut into wedges. Arrange the apple wedges in a circular baking dish, place the prunes and dried apricots on top, and evenly layer the raisins.
Step 5
Sprinkle the fruits with 4 tablespoons of sugar, drizzle with wine, place on the lower rack of the oven, and bake for 30 minutes.
Step 6
Transfer the chicken to a serving platter, arrange the fruits around it, and drizzle with the sauce left from the dried fruits.
